WEll here we go again!
lol
I have started the low carb, high fiber, exercise diet.
Slim fast has joined the low carb diet drinks and south beach diet has the lowest carb, good tasting bars that I can find.
Each has fiber and sugar alcohol grams that don't affect our blood sugars so we get to subtract them from the total carbs amount.
For our 10 year wedding anniversary(which I forgot about...bad wife!) we went to outback steak house and I had the best meal!
Had chicken with artichokes and sundried tomatoes with alfredo sauce and steamed veggies and a salad. I was stuffed!
I am not really counting carbs I am just avoiding them as best as I can and trying to eat healthier foods. Like I avoided their bread and croutons and potatoes.... and chose veggies instead.
I went to the gym this morning and tried as best as I could to keep up with the basic cardio step aerobics class. It is getting easier each day that I go and join them...lots of people. I have a friend who has just started and it was fun knowing someone there....someone to groan with...lol

now bizi....you gotta watch that ole exercise diet.....munching on dumbells can really add too much iron. but the "eye candy" in the free weight area is awesome dessert....and NO CALORIES and deffinatly NO FAT! :p

just had to pop on over and say howdy!!! we built a new gym. hehehe...just what we needed huh? more work. pm me and fill you in. don't want to make the board take a snooze or bore them to tears.

Mushroom & Tomato Salad

Ingredients (3-4 portions):

Mushrooms, 16 oz. very fresh
Tomatoes, 2 or 3 juicy ones, ripe but firm
Extra Virgin Olive Oil, 2-3 tbsp.
Lemon Juice, from 2-3 lemon halves
Salt and Pepper to taste
Basil, fine chiffonade of 4-5 large fresh leaves (small pinch dried)
-- or--
Thyme, 4-5 fresh sprigs (a pinch dried)


Directions:

1. Slice the mushrooms very thinly (1mm); put them in a large salad bowl.
2. Slice the tomatoes thinly (2mm); place them in a layer to cover the mushrooms.
3. Sprinkle with salt and pepper. If using fresh thyme or any dried herb, add these now.
4. Drizzle oil and lemon juice over tomatoes.
5. Cover the bowl and refrigerate for 30 minutes.
6. Mix gently but thoroughly, using spoons or flat utensils - nothing pointed, to avoid mangling all the delicate mushrooms slices.
7. Refrigerate at least another 30 minutes, stirring occasionally if possible.
8. If using fresh basil, add it just before serving.

Notes:

Serving suggestion: Green onions, finely minced garlic, or black olives can be mixed in, used as garnish, or served as toppings.

Advance preparation: This salad retains its texture for 4-6 hours, so can be prepared early.

Other uses: Leftover salad will become soft and more cohesive - tastes good alone, in sandwiches or in other salads.

Stack the leaves one on top of the other and roll tightly into a cylinder. Slice the cylinders of leaves crosswise into thin strips.

I used to loooove the outback steak house! my favorites are the filet and the salmon. but i also like their pasta dishes - better than most "italian" restaurants. and their appetizers... yum. well found out two of my friends are meeting up and i of course told them to go to outback - vicarious satisfaction? :D anyway, your meal sounded sooooo yummy (not on menu when i was there) that i passed on the details:we went to outback steak house and I had the best meal!

on the diet you really try to watch the bad fats and use the good fats as much as you want: avacodoes, olive oil, nuts...etc. We still need at least 20% of our diet in fats! most nutritionist I don't think want us to know that!
I am only using the low carb bread...5 grams per slice.
I made it to the gym 4 days last week...makes me feel good to knkow that I can stick to something...we shall see in the weeks ahead.
I think I have heard a good statement.....
Do something for yourself everyday.
I worked in the yard and my back is sore...have to watch just what I am doing!
I am glad that you found it here...I have missed you.

hehe bizi, i've heard that statement before... yeah, it oughtta come with a warning sticker about what or how much to do! (me, packed and hoisted and unhoisted and unpacked stuff... sigh... me too, the back.)

maybe we need to reconsider what "for ourselves" means to us? :D I mean i know yardwork and moving is for ourselves, sorta - i mean it ain't for anybody else, but... is that the spirit of the saying... you know?

ok, here goes with the SpinaCotta (separate post - i have to ubb it first.) no eggs in this. egg/spinach is a popular combo... may have something like that tho. ;)

Spinacotta

This is an old recipe I came up with during my college days when I knew nothing about cooking. It was an experiment that turned out really well.

Ingredients (4 portions):

Spinach, frozen 10 oz package, thawed, drained well
Ricotta Cheese, 1 cup
carrot, 1 large
Onions, ground 1 to 2 tbsp.
Ginger, fresh 3-6 slices
Coriander, ground, 1/2 tbsp.
Cumin, ground, 1 tbsp
Lemon Juice, 2 tbsp.
Olive or Peanut Oil, 3 tbsp
Butter, 1/2 tbsp.
Water, 1/2 cup
Salt and Pepper to taste

Tools:

Frying pan: 10" or larger

Directions:

1. Quarter the onions and slice thinly.
2. Cut carrots into matchstick slivers. If you aren't big on matchstick-cutting, use 2mm thick slices instead.
3. Heat oil in pan and add onions, ginger, cumin and coriander. Combine well and let simmer until onions are clear.
4. Add water and carrots. Cover and bring to simmer. Cook 5-10 minutes, or until carrots just lose their crunch.
5. Add spinach and combine well. Cover and bring to simmer. Cook another 3-7 minutes, until spinach and carrots are fully cooked.
6. Mix in butter and ricotta cheese. Increase heat momentarily if necessary to "reduce" (eliminate excess liquid).
7. Remove from heat, let sit several minutes, then mix in lemon juice.

Serving Suggestions:

Entree: Serve hot as a vegetarian entree., with a baked potato or with fresh tomatoes on the side.

Side dish: Serve hot as a side dish, with chicken, hardboiled eggs, ham...

PitaCotta: (my favourite! :D) Use as a pita bread filling (warm or cold), or, grab a fork and munch it right out of the container, bachelor style.

bizi you made an interesting point. i wonder if you were referring to the spices - not everyone keeps or even can get fresh ginger.

ok so here are some substitutions/generalizations to the recipe that might simplify things...

1. The spices - Ginger, Coriander, Cumin - need not be exact. They can all be substituted with a single ready mix such as Curry Powder, Garam Masala or similar blends you might have on hand. Try to avoid very sweet blends, such as those with a lot of cinnamon.

2. Alternatively, the spices may be omitted altogether.

3. Lemon Juice can be omitted. It can always be added upon serving. I liked the taste better with; also i believe it helps make available the iron from the spinach (absorption enhanced by vit. c).

4. Cooking oils need not be specific. Use what you have: peanut, corn, sunflower oils, butter, marg... (Just put sun' grease in'ere! WD40 or whatever. :D)

Hi All,
Started a cardio regime on a stationary bike. Trying to do 600 calories a day. Sometimes works out to be more, less if starved of time. Feel sooooo goody 2 shoish. Can't give up on bits of sweets 'though! : )

i will edit my post above. i looked at it and it looks all confusing to me too. hah!

bizi, the curry is a great sub for all the spices. You do need the onion fresh. you can omit the lemon juice. i forget if it had a functional aspect; i *think* it may help liberate iron from the spinach. aside from that, i liked the taste more. it is the kind of thing you can just add right at the moment you eat the stuff anyway - that is even better vitamin c/iron wise.

serengeti, please feed thyself!!! please listen to bizi.

i think i have another suitable recipe, but i don't know where i typed it in. haha they are going to rename us the "health club" board if we keep this up. or perhaps better yet, The Health Board :D

boy did I go off my diet on monday....
3 big peices of the best chocalate fudge....and a couple of margaritas...to boot!
I jsut ate half a jar of peanuts and I feel ill.....
why am I doing this?

I binge when I am obsessed with a particular food - generally cheese/smoked salmon/anything sweet. I will eat preserves when nothing else is around.

Brushing my teeth when a craving hits sometimes works for me. Some kind of psychological push that brushing teeth is an activity that happens after a meal?
But at other times I reach for the fork anyway. :(

Nowadays my cycling keeps me from going on too guilty a trip. Small but useful mercy. :D

Dear Bizi,

That sounds yummy. well not mixed altogether but... :p

It was a slip. It is ok. You just had a "night out on the town" dietwise. It does sound like a binge/cravings, as Serengeti suggested. Are you allowing a little "cheat food" daily? Something to keep your taste buds quiet before they raise a rucus?

Chocolate has been associated with lack of or increased need for magnesium. Are you getting enough Mg? - Milk/cheese (but pref. milk), and GREEEN LEAFY vegetables - Mg is a consituent of chlorophyll. (Some cravings are biologically based.)

Peanuts. Hate to say this but I'm glad you didn't feel so good after that, lest you had gone through the whole jar! OMG :eek: Peanuts are also not the worst in cheat foods. But, are you getting legumes, in general?

Margaritas - that says taste buds or wanting a "boost" to me... maybe wanting to escape deprivation? does that ring true with you?

Another thought. Are you facing this diet too aggressively? Does it feel like a self-imposition, or worse, self-punishment - not to say it is - just, does it ever FEEL that way to you?

Why are you dieting... any other reasons lurking in the depths of the psyche, besides health? Body image? Other people?

Well, savour :p the memory of Monday (ok except the ill part) but please let yourself off the hook for it. Think of allll those other days when you observed the guidelines better! Please be extra gentle with yourself. You deserve it. . I do hope your tummy feels better today.

I will eat preserves when nothing else is around. oOOOOOH yEAH! comin' in loud and clear there... ohhh boy is that me. Gone through half jar of preserves in one shot - but cheese is the killer. I'm more of a saltaholic.

I also find that brushing my teeth can help - for me though it's more like, i just spent all this effort brushing (i brrrrushhhh) and now i'm going to "undo" it by eating? naahhh. (ok well maybe :D)

Since I started exercising and dieting...I am hungry all of the time.
It is almost like exercising has given me an excuse to add an extra meal...I eat something when I first get up, then immediately after working out and then lunch that is 3 times!
You are right about the bored+eating.
I ate 3 diet ice cream bars in a half an hour time frame last night.
need to brush my teeth sooner than right before bed.
That was a great suggestion.

I also think you are right about the whole sacrifice thing.
I want to be healthier and am still exercising and I feel really good about that.
Perhaps because I don't need to lose that much weight...5-10 poounds would be nice...I don't feel the pressure to really follow thru with this diet thing.
What I would really like to do is shift the weight upward...lol
that extra 10 pounds is on my hips and I don't really have much up top to begin with. That would make me happy! DReam on .....
I think munching on some carrot sticks would be better than the nuts or the ice cream bars.
One bar has only 4 net carbs! and only like 90 calories.....
one is a great treat...3 is a mini meal!
Thanks again for your suggestions. I especially like the brushing my teeth one and I am forgetting that when I am craving something...I should try drinking a glass of water and see if I was just thirsty instead of hungry.

I wish I could loose some from my top. From not quite 33"/84 cm I went up to 42"/106 cm and now thankfully 'am down to 38"/96 cm. I think I will stop once I am down to 36"/ 92 cm. I am beginning to like myself a little meaty. ;)

bizi...what do you think of the taste of the low carb slim fast? :o i can drink it...but yuck. does really fill me up. could be that my tummy tell my brain it super full so i dont drink 2. :p

the south beach bars are pretty good...so are the zone ones. they even have little snack size. full of nutrition. satisfies the sweet tooth. :D even mine! easy to carry one in your purse or glove box in the car.

I find the low carb shakes at slim fast to be torture to drink....some really bad after taste...so I hurry and drink it all straight then drink something else fast after that to stop the after taste.

I do however like the optima kind.

It has more carbs but is very tasty and I find that I like having some carbs available before I go to the gym...at least that is what I keeep telling myself.
20 carbs after the fiber carbs reduction.

but I never used to eat breakfast so....

I too like the south beach diet bars....the remind me of a rice crispie bar...well sort of...lol
I actually found a lunch makers that comes with meat cheese and crackers and it had the tinyist little butterfinger bar...jsut a smidge of the bar ...just popped right in my mouth and sucked on it for a really long time....
very very satisfiying! and the whole thing maybe had 25 carbs! so that was great!
they say that if we stick under 100 carbs that we would still lose weight just alot slower. slow is ok as long as I don't go up!
